Brisket is a cut of meat that all animals have. We use Beef Brisket,
which is from the breast or lower chest of the cow. The term derives
from the Middle English “brusket”. Brisket is a versatile
cut of meat, used in the Southern States for smoking. The Jewish often
braise the meat as a pot roast & others choose to brine the brisket
for a popular use as Corned Beef.
The Brisket Basket dry rubs our whole
beef with a Smoked Paprikesh Mix, & slowly cooks at low temperatures.
We serve it sliced or chopped. We also grind our brisket & use it
for our hamburgers & meatloaf.

Hominy, whole corn, originally baffled our colonial ancestors, until the Indians
taught them how to make this obdurate grain edible. Hominy is merely processed
corn. In the South Hominy is frequently ground & known as grits. In New
Orleans, Big Hominy is still used as whole kernels, therefore the big versus
little hominy names. Our Hominy has a bit of southwestern influence, as we
have very mild green chilis, cheddar cheese, and sour cream. Cooked slowly
till it bubbles.
Our own version includes fresh Chef Potatoes, Red Onions, Smokey Bacon, Balsamic Vinegar & other spices that we wouldn’t be able to share. It isn’t hot in spice, however usually served from room to warm temperature.
